Io vi propongo una colorata versione del classico Mac and Cheese americano, qui arricchito dalla zucca. La ricetta originale è opera di Anna Calabrese, io ho cambiato poche cose, ho utilizzato pasta integrale, pecorino sardo e zucca hokkaido.
EASY PUMPKIN MAC AND
CHEESE

Ingredienti per 6 persone
400 g di penne rigate
330 g di salsa Alfredo
300 g di zucca a dadini cotta in forno
1 tazza di peperoni arrostiti
4 tazze d'acqua
¼ di cucchiaino di sale
⅛ di cucchiaino di pepe nero tritato
170 di pecorino sardo semi stagionato a dadini
Per la salsa Alfredo
½ tazza di burro
2 tazze di panna
120 g di formaggio cremoso spalmabile
1 spicchio di aglio schiacciato
1 cucchiaio di aromi misti (origano,
prezzemolo, basilico, timo, maggiorana …)
1/4 di cucchiaino
di pepe
1 tazza di parmigiano grattugiato
In una pentola unite burro, aglio, panna, e crema di formaggio, cuocete a fuoco medio mescolando fino ad ottenere un composto omogeneo. Unite gli aromi, il sale e il pepe. Mescolate bene, aggiungete il parmigiano, portate a bollore e cuocete per 5 minuti o comunque fino ad ottenere una salsa bella consistente. Eliminate l'aglio.
Per i mac and cheese
Sistemate una capiente pentola antiaderente i
primi sette ingredienti. Aggiungete il pecorino a dadini. Cuocere a fuoco
medio-alto mescolando spesso fino ad ebollizione quindi ridurre il calore a
medio e cuocere a fuoco lento, coperto, per il tempo di cottura della pasta
mescolando spesso. Quando la pasta sarà cotta ma non sfatta e il liquido tutto
assorbito, regolarsi con l'intensità dei fuochi, spostare la padella dal fuoco,
cospargere con il formaggio, mescolare, coprire, lasciare riposare 5 minuti
prima di servire. Completare con una spolverata extra di pepe nero

Ma perche passo da tutte voi e vorrei farele tutte queste ricette??? Sara che amo la Zucca... ma questa pasta è di un apetitoso doppio perche hai usato la pasta integrale che a me piace tanto.
