MTC TASTE THE WORLD N.0: UN RISO ROSSO DAGLI AROMI GULLAH AI PROFUMI DI SARDEGNA

MTChallenge Taste the World è la nuova entusiasmante veste di MTChallenge alla scoperta delle minoranze etniche e culturali del mondo  e questo mese è stato interamente dedicato alla comunità afroamericana dei Gullah-Geechee (QUI)


La sfida si articola in due fasi, la prima dedicata alla scoperta del piatto più rappresentativo, il Red Rice, di cui vi ho parlato nel mio post precedente. 
La seconda fase della gara prevede una reinterpretazione del piatto tradizionale senza però tradirne l’essenza e le radici e QUI trovate le meravigliose elaborazioni degli altri partecipanti alla sfida. 
L’essenza della loro cucina si può riassumere con la velocità di esecuzione (lavoravano come schiavi, non avevano troppo tempo da dedicare alla cucina) e l’utilizzo di materie prime che abbondavano sul territorio. Nulla di ricercato, ma sapientemente arricchito da spezie e aromi che ricordassero la loro terra di origine e la nuova patria. 
Che succederebbe allora se si trovassero a dover cucinare qui da noi? Con le nostre erbe, spezie e avendo a disposizione le nostre verdure e i nostri pesci?
Della loro tradizione ho mantenuto il loro riso, la tecnica di cottura, la piccantezza del peperoncino, la dolcezza della cannella e la nota caratteristica del cumino e dell’alloro.
Detto fatto, in questi giorni sono in Sardegna, precisamente in Gallura, e vivo in un meraviglioso posto in mezzo alla macchia mediterranea, immersa nei profumi intensi di elicriso, timo, alloro, lentisco, corbezzolo e altre decine di erbe inebrianti. Ho a disposizione verdure saporite regalate dall’orto di un amico e pesce freschissimo, quello che arriva dai pescherecci, mai lo stesso.
Ieri ho trovato calamari, triglie e gamberi rossi da aggiungere a pomodori maturi, zucchine, melanzana e peperoni dolci per un piatto profumato di spezie pesce e verdure che dal primo boccone ci ha portato dalla campagna sarda alle risaie della Carolina.


RISO ROSSO SPEZIATO CON PESCATO E VERDURE

Per 8 persone
500 g di riso a chicco lungo tipo basmati lavato e ammollato 15 minuti
1 lt di brodo di verdure
½ lt di fumetto di gamberi ottenuto dagli scarti (teste e gusci)
100 g di concentrato di pomodoro
400 g di passata di pomodoro 
1 cipolla bianca grande tritata
4 spicchi di aglio schiacciati
50 g di pancetta affumicata a dadini
3 acciughe salate sciacquate e diliscate
1 cucchiaio di bottarga (facoltativo)
1 o 2 peperoncini piccanti
3 foglie di alloro
1 cucchiaio di cannella in polvere
1 cucchiaio di prezzemolo tritato
4-6 foglie di basilico
1 cucchiaino di semi di cumino
1 cucchiaino di semi di finocchio
1 cucchiaino di timo
4 triglie medie pulite e squamate
8 calamari piccoli puliti
24 gamberi rossi medi sgusciati (gli scarti per il fumetto)
1 melanzana viola piccola a dadi grossi
1 peperone verde medio a falde
1 zucchino medio a rondelle
1 cuore di verza a spicchi
Olio extravergine di oliva

Scaldate l’olio in un tegame dal fondo spesso, che abbia un coperchio pesante ermetico, e rosolate aglio e cipolla. Dopo un minuto aggiungete acciughe e bottarga e fate sciogliere mescolando. 
Aggiungete i semi di cumino e finocchio, il timo e tostate per un minuto, poi mettete in pentola il concentrato e scioglietelo accuratamente. Appena sfrigola aggiungete la passata di pomodoro, la cannella e il basilico spezzettato. Lasciate sobbollire 10 minuti, poi mettete a cuocere le triglie girandole una volta. Dopo 4 o 5 minuti saranno cotte, toglietele e tenetele in caldo. 
Aggiungete il brodo di verdura e il fumetto di gamberi alla salsa di pomodoro e portate a ebollizione. In questo sugo fate cuocere i calamari pochi minuti, estraeteli e teneteli in caldo. Allo stesso modo fate cuocere i gamberi e tenete in caldo anche loro. Cuocete anche le verdure finché saranno al dente, poi toglietele e tenetele in caldo. Togliete dalla pentola il sugo brodoso di pomodoro. Nella pentola fate rosolare la pancetta in quattro cucchiai di olio, poi versate il riso. Fate tostare qualche minuto, poi versate il sugo di pomodoro che dovrà coprire bene il riso. Eventualmente allungate con un po’ di acqua. Il liquido dev’essere doppio volume rispetto al riso. Regolate il sale, aggiungete le foglie di alloro e portate a ebollizione. Abbassate al minimo, coprite con il coperchio e fate cuocere senza aprire per 12 minuti. Aprite e, con due forchette, sgranate il riso che avrà assorbito tutto il sugo. Versate in un grande piatto largo riscaldato e sistemate sopra pesce e verdure ben caldi. Servite subito con altro peperoncino a piacere.

Heat the oil in a thick-bottomed pan with a heavy airtight lid, and brown the garlic and onion. After a minute, add anchovies and bottarga and melt while stirring. Add the cumin and fennel seeds, the thyme and toast for a minute, then put the concentrate in the pot and dissolve it carefully. As soon as it sizzles, add the tomato puree, cinnamon and chopped basil. Let simmer for 10 minutes, then cook the red mullet by turning them once.
